Two pallets of Turkish dried apricots can look like completely different products — one bright orange, the other deep brown — and buyers new to the category often assume they are looking at a quality gap. They are not. They are looking at a processing decision that should have been made deliberately at the specification stage, because it determines which shelf the product belongs on, what the label must say, and how the fruit behaves in storage.
What sulphur dioxide actually does
Sulphur dioxide treatment preserves the carotenoid pigments that give apricots their orange colour and slows the enzymatic browning that otherwise takes place during drying. Untreated fruit oxidises naturally and moves through amber to a deep brown. The flesh, the sugar content and the fruit itself are unchanged; what changes is colour retention and, to a degree, how the appearance holds up over months in a warehouse. Calling one grade "natural" and the other "processed" is technically fair but commercially unhelpful, because both have legitimate channels and neither is a substitute for the other in the channel where it belongs.
The labelling consequence
This is where the decision stops being cosmetic. Under EU rules, sulphur dioxide and sulphites must be declared as an allergen when present above 10 mg/kg or 10 mg/litre, expressed as total SO₂. That means the treatment choice reaches the label, the allergen statement and the specification a retailer signs off. A buyer who leaves the decision to the packer discovers it at artwork stage, which is the expensive place to discover it. Agreeing the grade at the brief stage — with the corresponding SO₂ level written into the specification — costs nothing and prevents a print run.
