Dried fruit looks like a simple product: fruit, water removed, packed. In practice the difference between a lot that sells through cleanly and one that comes back as complaints is decided by a handful of measurable factors, most of them set before the fruit reaches your warehouse. Buyers who understand these factors write better specifications and ask sharper questions of the packer.

Moisture and water activity: two numbers, not one

Moisture content tells you how much water is in the fruit; water activity (aw) tells you how much of that water is available for microbes and chemical reactions. Soft, "moist" dried fruits deliberately keep more water than hard-dried types, which is legitimate as long as the water activity stays low enough to hold moulds and yeasts in check for the intended shelf life. A specification that names only a moisture percentage misses half the picture.

The practical step is to ask which value the packer measures, how often and at what stage. Moisture drifts in storage and transit as fruit equilibrates with the surrounding air, so a figure taken at packing only holds if the pack and storage conditions keep it there. When two suppliers quote very different shelf lives for what looks like the same product, the explanation is usually water activity and pack barrier rather than the fruit itself.

Sorting and foreign matter control

Sorting is where a raw agricultural product becomes a retail-grade one. Typical stages in a well-run packing line include:

  • Sieving and destoning to remove sand, stalks, stones and dust
  • Air or optical separation for light debris and colour defects
  • Removal of pits, stems or peel fragments according to the fruit
  • Visual inspection on the belt for anything the machines miss
  • Metal detection or X-ray after packing as a final control

These controls are layered because no single step is reliable on its own. Uniformity is what a shopper sees first. Size grading matters for appearance and for pack weight accuracy, since a mix of very small and very large pieces makes portioning harder.

Agree the grade in writing: piece size or count range, colour description, and tolerances for broken pieces, over-dried fragments or sugar bloom. Buyers who leave these points implicit tend to be surprised at the second delivery, not the first.

Storage temperature, humidity and light

Once dried, fruit is stable but not inert. Warmth accelerates browning and flavour loss, humidity lets the product reabsorb water and turn sticky or support mould, and light fades colour. Strong odours in the store are absorbed surprisingly quickly. The general rule is cool, dry, dark and well ventilated, with stable rather than merely low temperatures, because fluctuation drives condensation inside packs. Ask where finished goods are held before dispatch and for how long, and look at your own chain too: a hot loading bay or an unheated winter warehouse followed by a warm shop floor can undo a well-specified product.

Pest prevention as everyday practice

Dried fruit is attractive to storage insects, and the industry has moved firmly towards prevention rather than treatment: sealed storage areas, inspection and cleaning of incoming raw material, first-in-first-out rotation, monitoring traps with recorded results, and rapid isolation of any suspect lot. Retail packs with a good barrier add protection on the shelf. Any packer serious about food safety will have this written down with records, and it is entirely reasonable to ask to see it.

Why the paperwork is part of the product

Documentation is what lets a buyer trace a complaint back to a lot, prove due diligence to a retailer or authority and reorder with confidence. The core set is a specification agreed by both sides, a batch reference on every carton that links to production records, the packer's food-safety certification and any analysis results relevant to the specification. Labelling and permitted treatments vary by market, so confirm requirements with the competent authority or a regulatory adviser for the country of sale rather than relying on assumptions.
